These are the first titles in a new series designed for the novice, with ``how to cook'' and ``how to shop'' sections, along with a variety of carefully written, unintimidating recipes from each of two popular cuisines. The timing couldn't be better, as more and more people used to subsisting on Chinese takeout or the daily specialties of the neighborhood Italian restaurant are, for economic and other reasons, turning to their own kitchens and undeveloped cooking skills for the first time. Some of the recipes can be found in any standard ethnic cookbook, but others seem fresh and new, and these small books have an undeniable appeal; they are likely to be popular.
